"I love these dishes, especially when it’s a bit grim and grey outside. The starter reminds me that spring is around the corner – the beautiful fresh mackerel has all the warmth of the spices used to flavour the beetroot. The main course is packed with the flavours I crave when it’s cold – chilli, fennel, coconut. You can play around with the presentation to make it as fiddly or as simple as you want. The tart is a wonderful way to finish off the meal, with the richness of white and dark chocolate complementing the unexpected warmth and depth of the cardamom."
