Gnocchi is so easy to prepare – the bite-size dumplings cook in boiling water in two or three minutes and even have the decency to float to the surface to announce that they are ready. They’re basically a potato pasta, and make a handy base for Italian sauces such as pesto. Some Italian regions cook them in water then fry them on a griddle.
