How to use up leftover gram flour

  • Crispy batter

  • Gluten-free béchamel
    Use gram flour in place of plain flour when making béchamel. Warm 450ml whole milk with a bay leaf and 1/2 onion. Meanwhile, melt 3 tbsp butter in a medium saucepan, add 3 tbsp gram flour and beat with a wooden spoon for 1-2 minutes until the paste starts to smell biscuity. Remove the bay leaf and onion from the milk, then whisk it into the paste over a gentle heat until thick. Finish with a grating of nutmeg and a good pinch of salt.
