Nigella Lawson's vegetarian pasta dish is unequivocally Italian. ‘Sugo crudo’ simply means raw sauce, and so here the tomatoes are indeed raw and, once peeled, deseeded and chopped, they’re left to steep with a little sugar, salt, pepper, a bruised garlic clove and good olive oil.
