Mirin [mir-in]

A rice wine used in Japanese cooking. Be warned though: if you don’t make your own sushi regularly, that bottle of mirin you bought for a one-off recipe might be doomed to spend many years loitering at the back of your cupboard. To avoid this happening, use a little sweet sherry instead.
