Our very own cheese toastie dons a sombrero in the form of the Mexican quesadilla, which translates as ‘little cheesey thing’ in Spanish. They’re easy to make and you can pretty much bung what you like into them. Heat a tortilla in the pan and sprinkle over the cheese (plus anything else that takes your fancy, cooked if necessary). Cover and leave long enough to melt the cheese, then fold half over to make a calzone-style sandwich.
