Radicchio [rad-eech-eo]

Beautiful white streaks make this crimson leaf a real looker, although arguably it looks more like a cabbage than regular chicory. Used raw in salads, it is bitter and spicy, but mellows when cooked. Also known as red or Italian chicory.
