A root vegetable belonging to the dandelion family. White salsify is pale and thin with roots, while black salsify is smoother and carrot-like. Also known as oyster plant because it tastes slightly of the seafood when cooked. Salsify can be used in the same way as other root vegetables - in soups and stews, boiled or mashed.
