Shallot [shuh-lot]

A small, hard onion, which has a delicate flavour and is used where regular onions would be too powerful, such as a delicate cream sauce for fish. Along with butter, says Anthony Bourdain in Kitchen Confidential, the shallot is the ingredient chefs use to make food taste better than anything you could do at home.
