The opening of London’s new sherry lounge, Bar Pepito, earlier this year provided another sign that Jerez’s great export is back in fashion.
In summer, that means dry, fresh, salty sherry – not the sweet stuff from the drinks cabinet – served chilled. For a bone-dry drink, pick a fino or manzanilla style.
There are plenty of decent ones to choose from, whether it’s a supermarket version – many of which are good – or a well-known brand such as Tio Pepe Fino (widely available from around £9) or Hidalgo La Gitana Manzanilla (£8.49, or £7.49 each for two bottles, Majestic). Pair with green olives, salty almonds or cool, fresh prawns.
