Probably Japan’s best-known gastronomic export, sushi is broadly
speaking the combined use of vinegar-flavoured rice and a selection of
raw and cooked fish and vegetables. Varieties include maki sushi, the
little rolls of rice and filling wrapped in seaweed (nori);
and nigiri sushi, the clumps of rice typically topped with a thin slice
of fish. Don’t confuse with sashimi, which is confined to fish and a
few garnishes.
