Top 10 tips for gluten-free cooking

Recent studies indicate that as many as one in every 100 people have Coeliac disease, an auto-immune disease triggered by gluten.

1. Always check the labels, many a product can have hidden ingredients, such as stock cubes and soy sauce.

2. If in doubt check the Coeliac UK website for information.

3. A fairly normal diet can be enjoyed with plenty of salads, meats and vegetables.

4. There are many substitute flours on the market such as chestnut and chickpea.

5. Most of the large retailers are now increasing their gluten-free lines and cooking ingredients.

6. Take care –  oats for instance can be milled in a flour environment, and may be contaminated.

7. With a careful diet Coeliac disease can be controlled very successfully.

8. When eating out in restaurants or takeaways, make sure the staff is aware of Coeliac disease; most chefs cannot even spell it, let alone know what it is.

9. If cooking at home, be meticulous when preparing foods using utensils or chopping boards.

I have found that if you use Dove's wheat and gluten free flour to replace normal plain and SR flour that most recipes work. Also i use corn flour for sauces sweet and savoury.
