Vanilla sugar [va-nil-ah shu-gah]

You can split a fresh pod and stick it in a jar of sugar to flavour it (don’t scrape out the seeds), but a more economical way is just to use the spent pod, the seeds of which you have already used in another dish. Leave for at least a day. The sugar can then be used in dishes where a vanilla scent is desired.
