The French-born baking maestro’s classes are renowned.  During the class you will cover making savoury and sweet pastry and using these to make savoury quiches and sweet tarts.  You will also learn how to make choux pastry and create choux swans. You also get lunch thrown in and leave with a copy of Richards book, Pastry.

Sorry to say I always buy ready made pastry as my pastry making atempts have always fallen short of my expectations, I did try to make choux pastry once and my young girls fell about laughing :0) God to have some one in the know show you how its done.

that would be fab. I made profiteroles from scratch for the first time since school at Hogmanay. They worked out ok but were all a funny shape. Some refining required methinks.
