Cavolo nero [cav-oh-lo nee-ro]
‘Black cabbage’ doesn’t sound anywhere near as alluring, but it is an equally accurate description. Cavolo nero (also known as Tuscan cabbage and dinosaur kale) is in season September-January; it looks like a savoy cabbage, has a taste that is a little bitter and is really more dark green than black. But don’t let the misleading advertising put you off – it has a distinctive flavour and can stand in for any kind of cabbage.
