Chorizo [chor-eeth-oh]
Where better for a sausage-lover to be born than Spain, home of arguably the world’s most exciting banger? Spicy chorizo is made using pork, peppers and garlic. The unique spiciness comes from the paprika, which can be sweet (dulce) or spicy (picante), so make sure you check the label if you can’t stand the heat. Chorizo sausages come cured – which can be cooked or eaten as is – or raw, which must be cooked. Chorizo can be used in a multitude of dishes. Once tasted, never forgotten.
