Coulis [cool-ee]
An ooh-la-la sauce for drizzling over desserts such as tart or ice cream. It’s made by cooking and puréeing fruit, then sieving it and mixing with sugar or liqueur. You can use pretty much any fruit for a coulis, or even make a vegetable coulis – a tomato one, for example, could go with fish.
