Couscous [koos-koos]
This versatile cereal made from semolina and water is an important staple in the diet of trendy Britons and, to a lesser extent, North Africans. Make it in 5 minutes by covering with boiling water, leaving to stand and then forking through to fluff up. At this point, you could dot with butter and bake, covered, for 15 minutes or mix in diced tomatoes, nuts, herbs or maybe some feta. Serve it alongside grilled lamb or chicken.
