Indian cusine in the UK has come a long way from the dark old days when it was more commonly associated with heavier, ghee-laden dishes. The Michelin-starred Atul Kochhar, of Mayfair’s Benares, has an entirely different approach – fresh ingredients given a modern European approach and infused with a deft Indian touch.
In Fish Indian Style, Atul’s attention is turned to harnessing the best of the British coastline, finessing with herbs and spices then combining with traditional ingredients – think Kentish oyster fritters with cumin and chilli-apple jelly, or seared trout with St George’s mushrooms, radishes and cheddar cheese in garlic and chilli dressing.
Completing the ensemble are guest recipes from friends and family, a basics chapter to assist with accompaniments and a helpful glossary of ingredients. A good all-rounder and a interesting new take on Indian cuisine.
