Lime leaf (kaffir) [lyme leef]

The West has the bay leaf, India has the curry leaf and South East Asia has the kaffir lime leaf, which is used to add a citrussy flavour – most famously in Thai cooking. The fresh leaves of the knobbly kaffir lime have an hourglass shape, and in the UK they are easiest to buy dried in jars.
