October
At this time of year, the earth’s floor has a bounty of delights, if you know where to look. If you don’t, visit a farmers’ market to see if you can get hold of porcini mushrooms and their wild cousins, says Tom Norrington - Davies.
You’d be hard - pressed to find a leaner and more free-range meat than game, so visit your supermarket or butcher and try Tom Norrington - Davies’ flavoursome autumnal dishes.
Fresh porcini mushrooms are the kings of the forest floor. They have an unrivalled flavour.

Make the most of... watercress
Unceremoniously shoved to one side for a while by rocket and those fancy-Dan micro-greens, watercress is back in pole position.
And quite right too, because it’s teeming with good things. Shall we count the ways? There’s the vitamins A, B1, B6, C and E, iron, zinc, magnesium, manganese, the carotenoids lutein and zeaxanthin, and quercetin, a flavonoid which is also a powerful antioxidant. This little cocktail will make your eyes sparkle, your skin bloom and your hair shine – in conjunction with a healthy diet and plenty of exercise, of course. A recent study at the University of Ulster revealed that watercress may help to reduce DNA damage in white blood cells, which can be a trigger in the development of cancer. Go eat.
