Salsify [sals-suh-fee]

This unusual root vegetable doesn’t have much to recommend it but can be used in much the same way as other root vegetables. White salsify is pale and thin with roots, while black salsify is smoother and carrot-like. Also known as oyster plant because it tastes slightly of the seafood.
