Bulgur wheat

No, nothing to do with Bulgaria. Bulgur (or sometimes spelled bulgar) is a cereal made with wheat – usually durum wheat – that’s widely used in Turkish and Middle Eastern cooking. It adds body to a salad, and its signature use is in tabbouleh [tab-oo-lay], a Mediterranean vegetable salad made with parsley, mint, tomato and lemon, and sometimes feta cheese.
