The largest growers of organic spelt in the UK, Sharpham Park is a mixed economy farm just outside Glastonbury owned by Roger Saul – founder of the British designer label Mulberry.
Spelt is an ancient grain, much favoured for its unique nutritional properties and also because it is much easier to digest than wheat. The farm has its own dedicated organic spelt mill, where the grain is first cleaned to remove its tough outer husk, and then either stoneground into either wholegrain or refined white flour, or flaked and puffed for our delicious breakfast cereals. Spelt flour can be used in all recipes where wheat flour is used, and is particularly delicious in bread, cakes, puddings and biscuits.
