Avocado and cheese quesadillas recipe

4 soft flour tortillas
4 tbsps refried beans
1 avocado, sliced
2 handfuls rocket leaves
2 handfuls grated Cheddar
1 tsp olive oil


1. Spread the tortillas with refried beans, slices of avocado, and sprinkle over rocket leaves and grated Cheddar. Top each with another soft flour tortilla.
2. Heat the olive oil in a frying pan and fry 1
at a time until crisp on both sides, then cut into quarters and serve.

Wine Recommendation
Don't go for wine, sip a full-flavoured, premium bottled lager with this dish.
