Baked spinach eggs recipe

Ingredients

  1. 4 tbsp tomato and chilli pasta sauce
  2. 500g bag baby spinach
  3. A knob of butter, salt
  4. Nutmeg, for grating
  5. 4 large free-range eggs
  6. 1 tbsp double cream
  7. Bread, to serve

Method

  1. 1. Spread the pasta sauce on the base of a baking dish.
  2. 2. Wilt the spinach in the microwave. Mix with
  3. a knob of butter, salt, pepper and a grating of nutmeg. Spread over the sauce and make 4 ‘nests’ in the spinach.
  4. 3. Crack in the eggs. Top each with double cream and a grating of nutmeg. Bake in a preheated oven at 180°C/fan160°C/gas 4 for 10-15 minutes.
  5. 4. Serve with bread.

Wine Recommendation

Australian Semillon is just the white for this.
