Chicken and feta couscous recipe

Ready in 8 minutes

100g sachet Ainsley Harriott’s Spice Sensation Couscous
175ml boiling water
50g feta, crumbled
A small handful fresh mint leaves, shredded
2 ripe vine tomatoes, roughly chopped
100g mixed marinated olives
200g pack roasted lemon and herb chicken fillets, torn into large pieces
Lemon wedges to squeeze over, if you like


1. Put the couscous in a large bowl. Pour over the boiling water, stir, cover with cling film and leave to stand for 5 minutes.
2. Fluff up the grains with a fork. Stir through the feta, mint leaves, tomatoes, and olives.
2. Stir through the roasted lemon and herb chicken fillets. Serve with lemon wedges to squeeze over, if you like.

Dear manda1967,Thanks for your comment. delicious. aims to include the nutritional content on the majority of recipes. However, some recipes, such as this one, is from our Assembly Cook section; these recipes are quick midweek meals that are literally 'assembled' from a mixture of easy-to-find shop-bought ingredients and fresh food, so the nutritional content isn't included. There are nearly a year's worth of evening meals currently online that are under 400 calories per serving; just go to the recipe search page, click on 'low calorie' in the dietary dropdown box and press search. I would really like the calories outlined for the recipes - as an unfortunate who has to watch every morsel so as not to put on weight it would be really really helpful - thank you
