Sticky lime and ginger chicken recipe

Takes 10 minutes to make and 20 minutes to bake

3 globes stem ginger in syrup
2 tablespoons honey
2 tablespoons soy sauce
Finely grated zest of 2 limes
The juice of 1 lime
2 garlic cloves, crushed
6 skinless chicken thighs
Serve with steamed basmati rice and tenderstem broccoli.

1. Preheat the oven to 230°C/fan210°C/gas 8. Drain and finely dice 3 globes stem ginger in syrup and mix with 2 tablespoons honey, 2 tablespoons soy sauce, the finely grated zest of 2 limes, the juice of 1 of the limes and 2 garlic cloves, crushed, in a bowl.
2. Add 6 skinless chicken thighs and mix together well. Spread out in a foil-lined or ceramic baking dish and bake for 20 minutes, turning over halfway, until cooked through.
3. Serve the chicken with steamed basmati rice and tenderstem broccoli.
