½ ripe avocado
Lemon juice
2 slices bread
¼ red pepper


Mash ½ ripe avocado with a little lemon juice, and spread onto your chosen bread. Finely chop ¼ pepper (orange, yellow and red are sweeter than green) and sprinkle over the avocado. Or, use a chopped roasted red pepper from a jar.
