Avocado with alfalfa recipe

This avocado with alfalfa salad is quick and easy to make - and is so good for you.

Avocado with alfalfa

Ingredients

  1. 2 large carrots
  2. a handful of alfalfa sprouts
  3. a handful of beansprouts
  4. 4 tablespoons of balsamic dressing
  5. 2 avocados
  6. fresh coriander sprigs
  7. a few peanuts

Method

  1. 1. Grate 2 large carrots and mix together with a handful of alfalfa sprouts (from health food shops) and a handful of beansprouts. Toss everything together with 4 tablespoons of balsamic dressing. Halve and stone 2 avocados and spoon the filling onto each half. Top with some fresh coriander sprigs and a few peanuts and serve 1 half per person.
