This avocado with alfalfa salad is quick and easy to make - and is so good for you.
Ingredients
- 2 large carrots
- a handful of alfalfa sprouts
- a handful of beansprouts
- 4 tablespoons of balsamic dressing
- 2 avocados
- fresh coriander sprigs
- a few peanuts
Method
- 1. Grate 2 large carrots and mix together with a handful of alfalfa sprouts (from health food shops) and a handful of beansprouts. Toss everything together with 4 tablespoons of balsamic dressing. Halve and stone 2 avocados and spoon the filling onto each half. Top with some fresh coriander sprigs and a few peanuts and serve 1 half per person.
