Blue cheese dressing recipe

A rich, creamy and luxurious salad dressing to serve over a salad of watercress, avocado and radishes.

Blue cheese dressing

Ingredients

  1. 50g blue cheese (Gorgonzola is good)
  2. 2 tbsp milk
  3. 1 tbsp white wine vinegar
  4. 6 tbsp olive oil

Method

  1. 1. Put the cheese in a food processor with the milk, vinegar, oil and some seasoning, and blend until smooth. Add a few drops of warm water if it’s a little thick.
