Broccoli and basil soup recipe

This quick and nutritious broccoli soup is delicious - and so good for you.

Broccoli and basil soup

Ingredients

  1. 1 chopped onion
  2. 1 chopped garlic clove
  3. 1 tablespoon olive oil
  4. 1 large chopped potato
  5. 600ml vegetable stock
  6. 1 large broccoli head, chopped,
  7. a bunch of fresh basil
  8. 150ml skimmed milk

Method

  1. 1.Fry 1 chopped onion and 1 chopped garlic clove in 1 tablespoon olive oil for 5 minutes. Add 1 large chopped potato and fry for 5 minutes.
  2. 2.Add 600ml vegetable stock, 1 large broccoli head, chopped, and simmer for 15 minutes.
  3. 3.Add a bunch of fresh basil and 150ml skimmed milk. Season. Reserving 1 floret, liquidise the soup, then reheat and serve, topped with pieces of broccoli.
