This quick and nutritious broccoli soup is delicious - and so good for you.
Ingredients
- 1 chopped onion
- 1 chopped garlic clove
- 1 tablespoon olive oil
- 1 large chopped potato
- 600ml vegetable stock
- 1 large broccoli head, chopped,
- a bunch of fresh basil
- 150ml skimmed milk
Method
- 1.Fry 1 chopped onion and 1 chopped garlic clove in 1 tablespoon olive oil for 5 minutes. Add 1 large chopped potato and fry for 5 minutes.
- 2.Add 600ml vegetable stock, 1 large broccoli head, chopped, and simmer for 15 minutes.
- 3.Add a bunch of fresh basil and 150ml skimmed milk. Season. Reserving 1 floret, liquidise the soup, then reheat and serve, topped with pieces of broccoli.
