Hip, funky, rum-based cocktails like the caipirinha are terrific party drinks because they’re very refreshing. This food-friendly cocktail is a sublime match for exotic canapés such as Sweetcorn and red chilli cakes with avocado salsa and Pork larb in little gem cups.
Ingredients
- 1/2 large lime
- 50ml cachaça or any white rum
- 20ml sugar syrup* (or sugar, to taste)
Method
- 1. Using a spoon, squash 1/2 large lime, cut into wedges, in a tumbler, releasing the juice and zest oil with the back of a spoon.
- 2. Pour in 50ml cachaça or any white rum and 20ml sugar syrup* (or sugar, to taste), then add ice cubes or crushed ice and stir well. Sip through a large straw.
Chef's tip
* You can make your own sugar syrup in advance by warming up equal amounts of white sugar and water (ie 200g sugar and 200ml water) and stirring until the sugar has dissolved, then allow to cool. It will keep in the fridge for up to a month.
