A quick and easy chicken recipe with a touch of tang.
Ingredients
- 1 chicken breast
- a slice of Parma ham
- sage leaf
- flour
- olive oil
- the juice of a lemon
- a big knob of butter
- lemon zest
Method
- Bat out 1 chicken breast between two sheets of cling film until about half as thick. Top with a slice of Parma ham. Stitch on a sage leaf with a cocktail stick. Dust with flour and season. Pan-fry in olive oil on both sides until tender. Add the juice of a lemon and a big knob of butter to the pan and give it a quick sizzle. Garnish with lemon zest.
