Chicken saltimbocca with lemon butter recipe

A quick and easy chicken recipe with a touch of tang.

Chicken saltimbocca with lemon butter

Ingredients

  1. 1 chicken breast
  2. a slice of Parma ham
  3. sage leaf
  4. flour
  5. olive oil
  6. the juice of a lemon
  7. a big knob of butter
  8. lemon zest

Method

  1. Bat out 1 chicken breast between two sheets of cling film until about half as thick. Top with a slice of Parma ham. Stitch on a sage leaf with a cocktail stick. Dust with flour and season. Pan-fry in olive oil on both sides until tender. Add the juice of a lemon and a big knob of butter to the pan and give it a quick sizzle. Garnish with lemon zest.
