Chilli, mint and yogurt prawns with shredded iceberg recipe

Try this delicious combination of chilli, mint and prawns for the perfect sandwich filling.

Chilli, mint and yogurt prawns with shredded iceberg

Ingredients

  1. 1 deseeded red chilli
  2. 100ml natural yogurt
  3. 1 tbsp sweet chilli sauce
  4. 1 tbsp finely chopped fresh mint leaves
  5. 300g cooked peeled king prawns
  6. 4 crusty rolls
  7. some shredded iceberg lettuce

Method

  1. 1. Finely chop 1 deseeded red chilli and stir into 100ml natural yogurt along with 1 tbsp sweet chilli sauce, 1 tbsp finely chopped fresh mint leaves and 300g cooked peeled king prawns. Taste and season.
  2. 2. Pile the yogurt prawn mixture into 4 buttered crusty rolls along with some shredded iceberg lettuce and a few extra small fresh mint leaves.
