Chilli slaw recipe

This is fresh-tasting, zingy and just wonderful served as a side. Use 3 or 4 chillies depending on their heat.

Chilli slaw

Ingredients

  1. 2 carrots
  2. 3-4 red chillies, deseeded
  3. ¼ green cabbage (such as a pointed cabbage)
  4. Zest and juice of 1 lime
  5. 3 tbsp crème fraîche
  6. 2 tbsp mayonnaise
  7. 1 tbsp extra-virgin olive oil

Method

  1. 1. Coarsely grate the carrots and place in a bowl. Finely slice the chillies into strips, add to the carrot and mix well. Finely slice the cabbage and add to the bowl with the remaining ingredients. Season, toss well and serve.

This is a lovely fresh tasting easy slaw which gets more chilli flavour developing the longer you leave it. It goes down well every time!
