This rich chocolate and cherry combo combines the classic flavours of Black Forest gateau in a glass.
Ingredients
- 142ml pot double cream
- 1 tbsp icing sugar
- 1 tsp cocoa powder
- 400ml good-quality chocolate ice cream
- 3 chocolate muffins, broken into pieces
- 400g can pitted cherries, drained but
- juice reserved for the sauce
- Grated plain chocolate, to decorate
For the chocolate cherry caramel sauce
- 200g soft brown sugar
- 142ml pot double cream
- 50g butter, cubed
- 100g plain chocolate
- 3 tbsp kirsch liqueur or brandy
Method
- 1. Make the sauce. Put the sugar in a small saucepan with the juice from the can of cherries and 2 tablespoons of water. Stir gently, then warm over a low heat until the sugar has dissolved. Remove from the heat and stir in the cream, butter and chocolate, until the sauce reaches a smooth, pouring consistency. Stir in the kirsch or brandy. Set aside for 10 minutes to cool slightly.
- 2. Lightly whip the cream with the icing sugar and cocoa. Set aside.
- 3. To assemble the sundaes, put a scoop of ice cream into a glass. Sprinkle over pieces of muffin and a few cherries, then drizzle with some sauce. Repeat these layers, then top with a spoonful of the whipped cream and sprinkle with grated chocolate. Repeat to make 5 more sundaes.
