Chocolate and cherry ice cream sundae recipe

This rich chocolate and cherry combo combines the classic flavours of Black Forest gateau in a glass.

Chocolate and cherry ice cream sundae

Ingredients

  1. 142ml pot double cream
  2. 1 tbsp icing sugar
  3. 1 tsp cocoa powder
  4. 400ml good-quality chocolate ice cream
  5. 3 chocolate muffins, broken into pieces
  6. 400g can pitted cherries, drained but
  7. juice reserved for the sauce
  8. Grated plain chocolate, to decorate

For the chocolate cherry caramel sauce

  1. 200g soft brown sugar
  2. 142ml pot double cream
  3. 50g butter, cubed
  4. 100g plain chocolate
  5. 3 tbsp kirsch liqueur or brandy

Method

  1. 1. Make the sauce. Put the sugar in a small saucepan with the juice from the can of cherries and 2 tablespoons of water. Stir gently, then warm over a low heat until the sugar has dissolved. Remove from the heat and stir in the cream, butter and chocolate, until the sauce reaches a smooth, pouring consistency. Stir in the kirsch or brandy. Set aside for 10 minutes to cool slightly.
  2. 2. Lightly whip the cream with the icing sugar and cocoa. Set aside.
  3. 3. To assemble the sundaes, put a scoop of ice cream into a glass. Sprinkle over pieces of muffin and a few cherries, then drizzle with some sauce. Repeat these layers, then top with a spoonful of the whipped cream and sprinkle with grated chocolate. Repeat to make 5 more sundaes.
