The perfect make-ahead dessert for a dinner party, this rich chocolate mousse will never go out of fashion.
Ingredients
- 3 eggs, separated
- 250g plain chocolate, chopped
- 2 tbsp brandy or rum
- 300ml double cream
Method
- 1. In a small bowl, lightly whip the egg yolks. Melt 200g chocolate with the brandy or rum in a heatproof bowl set over a pan of simmering water; stir occasionally until smooth (see p81). Remove from the heat and gradually add the beaten yolks. Fold through the cream to combine.
- 2. In a large, clean bowl, whisk the egg whites with an electric hand whisk until soft peaks form, then fold into the chocolate mixture. Pour evenly into glasses or cups, cover with cling film and chill for at least 3 hours or until firm. Chop the remaining chocolate into small shards and sprinkle over the top before serving.
