Cinnamon eggy bread

Ingredients

  1. 2 medium eggs
  2. 2 thick slices sunflower seed, brown or white bread
  3. Knob of butter (about 15g)
  4. 2 tbsp golden caster sugar
  5. 1/2 tsp ground cinnamon

Method

  1. 1. Crack the eggs into a shallow bowl and mix with a fork. Cut the bread in half and press into the egg mixture, turning to coat.
  2. 2. Heat the butter in a large frying pan over a medium heat, until melted. Add the egg-soaked bread and cook for 2 minutes. Turn the bread slices over and cook for another 2 minutes, until pale-golden.
  3. 3. Put the sugar and cinnamon onto a shallow plate. Put the hot eggy toast onto the sugar, turning it to coat both sides. Divide between plates and eat warm.
