This creamy bread sauce is a great accompaniment to a roast turkey dinner. Try it out over the Christmas period.
Ingredients
- ½ small onion
- 1 blade of mace
- 150ml whole milk
- 2 fresh bay leaves
- 6 black peppercorns
- 25g fresh white breadcrumbs
- 10g butter
- 1 tbsp double cream
- Freshly grated nutmeg
Method
- 1. Slice the onion and put it in a small pan with the mace, milk, bay leaves and peppercorns. Bring to the boil, then take off the heat and leave for at least 1 hour to infuse.
- 2. Bring back to the boil, then take off the heat, strain and return to the pan. Stir in the breadcrumbs and half the butter. Rest for 15 minutes.
- 3. Just before serving, bring the sauce back to a simmer, then stir in the rest of the butter, the cream and some nutmeg, salt and pepper.
