A quick, simple, hearty pasta dish that's a great midweek meal for family or friends.

Crispy bacon, chilli and tomato rigatoni

Ingredients

  1. 400g rigatoni
  2. 8 rashers streaky bacon, chopped
  3. 1 large red chilli, deseeded and chopped
  4. 2 tbsp capers, rinsed
  5. 10 pitted black olives, halved
  6. 350g tub tomato pasta sauce
  7. 2 tbsp crème fraîche

Method

  1. 1. Cook the rigatoni according to the pack instructions, then drain and reserve some water.
  2. 2. Fry the rashers in a large frying pan for 5 minutes. Add the chilli and cook for 1 minute. Add the capers, olives, and tub of pasta sauce and warm through.
  3. 3. Stir in the crème fraîche, the pasta and reserved water. Season and serve.

Wine Recommendation

Enjoy a fresh, fruity Italian red, such as Valpolicella.
