A pick n' mix dish that suits casual dining, these turkey koftas are perfect for a midweek meal with friends.
Ingredients
- 500g free-range turkey mince
- 25g fresh white breadcrumbs
- 2 garlic cloves, crushed
- 2 tsp English mustard powder
- ½ tsp cayenne pepper
- 2 tbsp Worcestershire sauce
- 2 tsp tomato purée
- 2 tsp brown sugar
- 1 tsp cider vinegar
- 1 tbsp olive oil
- For the apple salad
- 2 little gem lettuces
- 1 green apple, finely sliced
- 4 spring onions, finely sliced
- Juice of ½ lemon
- 3-4 tbsp extra-virgin olive oil
Method
- 1. Soak 8 wooden skewers in warm water. Put the kofta ingredients, apart from the oil, in a large bowl and season well. Mix with your hands until well combined.
- 2. Form the mixture around the skewers to make 8 koftas, then cover and chill for 10 minutes.
- 3. Meanwhile separate the little gems into leaves and mix with the apple and spring onions in a serving bowl. Whisk the lemon juice with salt, pepper and a pinch of sugar, then whisk in the extra-virgin olive oil in a steady stream until you have a thick vinaigrette. Pour it over the salad and toss well to coat.
- 4. To cook the koftas, heat the 1 tbsp olive oil in a large pan over a medium heat and cook the skewers for 15-20 minutes, turning regularly, until browned and cooked through. Serve with the salad.
