Feta, roasted Mediterranean veg, olives and pine nuts recipe

Try this great vegetarian combination for a sandwich filling.

Feta, roasted Mediterranean veg, olives and pine nuts

Ingredients

  1. 1 red onion
  2. 1 red pepper
  3. 1 courgette
  4. Drizzle of olive oil
  5. Drizzle of balsamic vinegar
  6. 2 tsp harissa paste
  7. 100ml yogurt
  8. 4 crusty rolls
  9. Handful of toasted pine nuts
  10. Handful of olives
  11. Handful of feta
  12. Fresh basil leaves

Method

  1. 1. Preheat the oven to 200°C/fan180°C/gas 6. Slice a red onion, a red pepper and a courgette into thin wedges. Put on a baking tray, drizzle with olive oil and balsamic vinegar, then bake for 30-40 minutes. Remove and set aside to cool.
  2. 2. Mix 2 tsp harissa paste with 100ml yogurt and spread onto 4 crusty rolls. Top with the veg, toasted pine nuts, sliced olives, feta and fresh basil leaves.
