Try this great vegetarian combination for a sandwich filling.
Ingredients
- 1 red onion
- 1 red pepper
- 1 courgette
- Drizzle of olive oil
- Drizzle of balsamic vinegar
- 2 tsp harissa paste
- 100ml yogurt
- 4 crusty rolls
- Handful of toasted pine nuts
- Handful of olives
- Handful of feta
- Fresh basil leaves
Method
- 1. Preheat the oven to 200°C/fan180°C/gas 6. Slice a red onion, a red pepper and a courgette into thin wedges. Put on a baking tray, drizzle with olive oil and balsamic vinegar, then bake for 30-40 minutes. Remove and set aside to cool.
- 2. Mix 2 tsp harissa paste with 100ml yogurt and spread onto 4 crusty rolls. Top with the veg, toasted pine nuts, sliced olives, feta and fresh basil leaves.
