This mix of Forest fruits and pear with an oaty cinnamon topping is delicious - and it's good for you.
Ingredients
- 500g pears
- Juice of 1/2 lemon
- 200g golden caster sugar
- 1 tsp cinnamon
- 500g frozen forest fruits
- 100g olive oil spread, chilled
- 200g plain or wholemeal flour
- 150g porridge oats
Method
- 1. Preheat the oven to 200°C/fan180°C/gas 6. Peel, quarter, core and slice the pears, then put into a 1.6-litre ovenproof dish and squeeze over the lemon juice. Add 100g of the sugar and the cinnamon, then gently stir in the frozen forest fruits.
- 2. Cut the olive oil spread into pieces and put into a food processor with the remaining sugar and the flour. Whizz together until the mixture resembles breadcrumbs. Add the oats, whizz together for a couple of seconds then sprinkle on top of the fruit. Bake for 20 minutes until it is pale golden. Serve with virtually fat-free fromage frais.
