Fresh fruit is the tastiest dessert of all when served in the right way. Try this healthy recipe when you want maximum flavour without the calories

Fresh pineapple with crushed mint and lime sugar

Ingredients

  1. 1 large ripe, sweet pineapple
  2. 50g caster sugar
  3. Finely grated zest of 1 lime
  4. Leaves from 20g packet fresh mint

Method

  1. 1. Slice the top and bottom off the pineapple. Stand it upright on a chopping board and slice away all the skin and the little brown ‘eyes’. Quarter lengthways so you have 4 long wedges. Slice away the woody cores from each wedge.
  2. 2. Now cut the pineapple across each wedge into thin slices and arrange them in small tumblers. Cover with cling film and chill in the fridge until needed.
  3. 3. To serve, put the sugar, lime zest and mint leaves into a small food processor and blitz for about 30 seconds, until the mint is finely chopped and you have a bright green mixture. Alternatively, pound the caster sugar, lime zest and mint leaves together in a pestle and mortar. Sprinkle over the pineapple in each glass and serve.

Chef's tip

A ripe pineapple will smell sweet and the leaves from the centre should pull out quite easily. Don’t be tempted to make the sugar before you need it because the mint will start to go black after a time and lose its fresh taste.
