Gammon with apple and Cheshire cheese recipe

Apples make a wonderful foil for the salty meat and the crumbly cheese is an added bonus in this easy gammon recipe.

Gammon with apple and Cheshire cheese

Ingredients

  1. 2 gammon steaks, about 180g each
  2. 80g Cheshire cheese
  3. 1/2 tsp wholegrain mustard
  4. 1 tbsp runny honey
  5. 1 fresh sage leaf, chopped
  6. 1 Golden Delicious apple

Method

  1. 1. Preheat the grill to high. Using scissors, snip the rind of each gammon steak at intervals to prevent it curling up during cooking. Place on a baking tray and grill for 4 minutes on each side.
  2. 2. Meanwhile, break up the cheese with a fork and mix it with the mustard, honey and chopped sage. Core the apple and slice thinly. Lay the apple slices on top of each gammon steak, then sprinkle with the cheese mixture. Pop back under the grill for a further 2 minutes, or until the cheese has melted and is turning golden. Serve with salad leaves and boiled new potatoes scattered with fresh chives.

Chef's tip

The apple and cheese topping is also great on pork chops. Grill chops on both sides until tender, then continue as for the recipe.
