Pasta is a great way to fuel hungry kids, and they'll love this Italian recipe for gnocchi with Parmesan
Ingredients
- 400g gnocchi (we used Italfresco tricolori gnocchi from Sainsbury’s)
- 2 tbsp olive oil
- 4 tbsp grated vegetarian Parmesan
- Rocket leaves, to serve
Method
- 1. Bring a large pan of salted water to the boil. Tip in the gnocchi and bring the water back to the boil. Cook for 2-3 minutes – when the gnocchi float, they are cooked. Put a large colander into the sink and pour in the gnocchi to drain well.
- 2. Divide the gnocchi between serving dishes and drizzle with olive oil. Season with salt and ground black pepper. Sprinkle over the Parmesan and top with rocket leaves to serve.
Chef's tip
Gnocchi are Italian potato dumplings and can be served like pasta with your favourite pasta sauce.
