Curry powder is a phenomenon that has spread to every corner of the globe – except India. Tom Norrington-Davies's mixture is a great all rounder.
Ingredients
- 4 tbsp coriander seeds
- 2 tbsp cumin seeds
- ¼ tsp fenugreek seeds
- 2 cloves
- Seeds of 6 cardamom pods
- ¼ tsp ground nutmeg
- 1 tbsp turmeric powder
- 1 tsp cayenne pepper (halve this for
- a milder taste)
- 1 tsp ground cinnamon
Method
- 1. Grind or pound the whole spices in a pestle and mortar, a mini processor or electric spice grinder, and add them to the powdered ones. To preserve the flavours, keep the mix in an airtight container until you need to use it.
