Greek salad recipe

This simple recipe for a Greek salad is a sublime taste of summer.

Greek salad

Ingredients

  1. 1 cucumber, halved lengthways, deseeded and diced
  2. 1 large onion, thinly sliced
  3. 6 plum tomatoes, cut into chunks
  4. 24 pitted Greek black olives, halved
  5. 225g feta, diced
  6. 1 head cos lettuce, torn

For the dressing

  1. 2 tbsp fresh lemon juice
  2. 6 tbsp extra-virgin olive oil
  3. 1 garlic clove, crushed
  4. 2 tbsp fresh oregano or thyme

Method

  1. 1. Put the diced cucumber, onion, tomatoes, olives and feta into a bowl. Toss in the lettuce. Whisk the dressing ingredients and plenty of seasoning together.
  2. 2. Shake the ingredients for the dressing together and pour over the Greek salad to serve.
