Green beans with red onion and redcurrants recipe

A good-looking side dish that goes well with salmon.

Green beans with red onion and redcurrants

Ingredients

  1. 300g fine green beans
  2. 1 tbsp extra-virgin olive oil
  3. 1 tbsp walnut or hazelnut oil
  4. 1 tbsp red wine vinegar
  5. 1 small red onion, finely sliced
  6. 50g redcurrants

Method

  1. 1. Top but don’t tail the beans. Cook in simmering salted water for 3 minutes, then drain and set aside.
  2. 2. On a platter, combine both the oils with the vinegar and season to taste. Add the green beans, red onion and redcurrants and toss well to serve.
