A good-looking side dish that goes well with salmon.
Ingredients
- 300g fine green beans
- 1 tbsp extra-virgin olive oil
- 1 tbsp walnut or hazelnut oil
- 1 tbsp red wine vinegar
- 1 small red onion, finely sliced
- 50g redcurrants
Method
- 1. Top but don’t tail the beans. Cook in simmering salted water for 3 minutes, then drain and set aside.
- 2. On a platter, combine both the oils with the vinegar and season to taste. Add the green beans, red onion and redcurrants and toss well to serve.
